Welcome back, my Jinpath Sik-Gu.

In our previous post, we explored the first two foundations of George Ohsawa’s Principles of Natural Gourmet: Whole Food and Natural. We learned that real nourishment comes from ingredients that retain their complete, unbroken form and carry the untamed intelligence of nature.

Today, we take our next step together. We will examine three more essential principles that deepen our relationship with what we put onto our tables and into our bodies: Fresh, Organic, and Local.

3. [Fresh]: Living Energy at Its Peak

What does it truly mean for food to be "fresh"?

Imagine pulling a vibrant carrot straight from the rich, damp earth. Or picking a crisp apple directly from the branch of a sunlit tree. In that exact moment of harvest, the food’s vital energy, nutrients, and life force are at their absolute peak.

From the very second a plant is separated from its roots or branch, its internal energy naturally begins to decline. Therefore, the closer food is to its original, newly harvested state when it enters your body, the richer its nourishment, and the more effortlessly your system absorbs its vitality.

This does not mean you must spend your evenings foraging in forests or working on farms. Modern life is demanding, fast, and full of complex responsibilities.

Rather, it is an invitation to cultivate a gentle awareness. When you sit down for a meal, simply aim for the freshest option available to you. Pause for a brief second, acknowledge the true value of the real food before you, and remain consciously aware of what you are offering to your body.

4. [Organic]: Clean Nourishment for a Healing Body

The fourth principle—Organic—is perhaps one of the greatest challenges of our era.

Today, industrial agriculture relies heavily on chemical fertilizers, synthetic pesticides, and massive doses of herbicides. Furthermore, large-scale vegetable farms are often permitted right next to mega-livestock facilities, creating complex environmental pollution.

These heavy chemicals do not merely harm human health; they degrade the soil, contaminate groundwater, and pollute the air we breathe.

Why do so many of us remain unaware of this urgency? Simply because we do not witness these scenes with our own eyes in our daily routines.

Consider this simple scenario: You are enjoying a meal at a beautiful restaurant. A staff member wipes down the table next to you, spraying a chemical cleaner. A tiny mist drifts through the air, and a few microscopic droplets land near your plate. How would that make you feel?

Now, imagine that chemical spray magnified a million times—not from a small hand bottle, but poured over vast farmlands from airplanes and helicopters. That is the reality for much of the produce sitting on modern grocery shelves. Wrapped in neat, beautiful packaging, we simply lose the natural habit of asking: "Where did this food truly come from?"

Please understand: I am not sharing this to make you feel guilty or uninformed.

For a very long time, I was completely blind to this reality myself. It took me years to realize how unaware I had been. That is precisely why I write to you today. My deepest wish is for you—and the people you wish to protect most—to gain this awareness much sooner than I did, so you can build a healthier, more vibrant life.

The Hidden Toll on Your Gut Health

When we regularly consume foods laden with pesticide residues, our digestive system absorbs the burden. These chemicals disrupt our delicate gut lining and destroy our native, beneficial gut bacteria.

Many people today turn to probiotic supplements seeking a quick fix. But if we continue to consume chemical-laden foods daily, those beneficial microbes struggle to survive anyway. True healing comes not from adding another pill to your routine, but from gently shifting your lifestyle to protect your body's natural ecosystem.
