[Journey of Salt 02] Sea Salt, Rock Salt, And...

Dear JINPATH Sik-Gu,
As I have shared with you before, the foundation of how I view food and cooking is minimalism. When we approach our nourishment through the lens of minimalism, the very first, and perhaps the most crucial step we must understand, is salt. To put it simply—if you were to prepare a meal and had absolutely nothing else but salt, you could still sustain yourself. That is how fundamental and deeply rooted this ingredient is to our survival.
Before we go any further, there is one critical truth I want you to remember.
I ask that you hold onto this as we walk this path together:
Salt is alkaline.
It is a strong alkaline food.
Why does this matter so deeply?
Because true salt protects our bodies from becoming too acidic.
Many of the modern diseases and struggles we face arise when our internal environment becomes overly acidic. In our modern, fast-paced lives, we have lost touch with this awareness. For far too long, we have consumed countless processed "products" labeled as food without a second thought. I have seen so many people suffer from health issues simply because their bodies have lost this alkaline balance.
This is why I want you to remember:
True salt is a powerful alkaline force that helps hold our foundation together.
